Overnight Oats

As you know if you read my last post, I have been working on making a serious commitment to my health this year, and that also has included the way I eat. I have never been wildly unhealthy in my choices, but I found myself eating quick, grab-and-go food and not getting nearly enough fresh fruits and veggies. I wanted to make sure I was starting every morning out with a filling, healthy start that would give me the energy I need to start every day off strong! I often have oatmeal in the morning, but as the weather has been heating up, I don’t love the idea of eating hot food. Enter Overnight Oats. I remember reading about them for the first time years ago on Kath Eats Real Food (the first blog I ever read!) and my friend Robbie recently suggested I add them into my breakfast rotation. To say I have a new favorite breakfast is an understatement.

The concept is very simple. Rolled oats are soaked over night in a liquid where they soak up the flavor and fluid. You choose the oats and what you want to soak them in-the possibilities are endless! And then you can top the oats with bananas, berries, granola, nuts, dried fruit, cereal, peanut butter-let your imagination run wild! I wanted to share with you a couple of my favorites currently and I am already plotting variations on the basic recipe to test out.

My favorite discovery since trying out overnight oats is Purely Elizabeth Muesli and Granola. I use the muesli as my base and often top with their granola for a little crunch and texture. I am totally in love with this brand-all natural, organic, gluten free and full of all kinds of nutrient rich ingredients. This is what the oats look like on their own! Nuts and seeds add so much flavor and nice texture.

I am enjoying my oats with equal parts oats, almond milk and yogurt. I use 1/3 cup of each, mix well and cover overnight. I have tried just using almond milk and found the texture a little too soupy; the yogurt adds some necessary creaminess and helps to bring it all together. I am already dreaming about adding some pumpkin to this mix in the fall-YUM!

And this is the oats the next morning! It is basically cold oatmeal but a little more creamy!

The beautiful finished product! My favorite toppings these days are a banana and peanut butter along with some granola for crunch. I stay full for hours and have energy to go workout or tackle all the things on my to-do list.
